Add all ingredient to a sauce pan. Simmer until strawberries are soft about 20 minutes. Add sugar/agave or honey to sweeten if desired. Add about a cup of water if mixture is thick, stir and simmer for about 5 mins. Remove from heat and strain liquid. Pour Simple syrup into a mason jar and store in the refrigerator.
