Auntie Anne's Pretzels: Copycat Recipe

Makes 12
For dough:
- 2cups milk
-2 packets active dry yeast (1 1/2 TBS)
- 6 TBS brown sugar
-4 TBS melted butter
-4 1/2 cups flour
-2 tsp fine salt
To finish:
-1/3 cup baking soda
-3 cups warm water
-Coarse salt
-8 TBS butter melted in a shallow dish
Warm up milk in microwave or for about 1 1/2 minutes on stove top. It should be about 110 degrees (not too hot or will destroy yeast) You should be able to comfortably touch milk. Stir in yeast and let sit for about 3 mins. Add 4TBS melted butter and sugar. Add flour one cup at a time. Add fine salt. Kneed for about 10 mins with stand mixer or by hand. Put dough in a prepared(greased) bowl and cover with prepared cling wrap. Let dough rise for 1 hour in a moist warm place until doubles in size. Preheat oven to 450. Punch down dough and divide into 12 equal parts. (Cut in 1/2, then divide each 1/2 into three and remaining into 1/2 again) Roll each dough piece out as thin strips.
Combine warm water and baking soda in a wide bowl. Form each strip of dough into a pretzel shape then dip in water and baking soda mixture. Place on baking sheet lined with parchment and sprinkle coarse salt on top of each pretzel. Bake for 7-11 minutes until browned. Brush each pretzel with melted butter while hot. enjoy!
