Crunchy Kale and Brussel Sprout Salad

For the salad
- Kale- remove stems and chop into small pieces
- Brussel sprouts- shredded
- Carrots-shredded
- Red onion- chopped
- Firm red apple-chopped
- Walnuts
- Gorgonzola, Feta or blue cheese optional
For the dressing
- Olive oil- 1cup
- Apple cider-½ cup
- Fresh squeezed lemon juice-1 Tbs
- Dijon mustard- 1 TBS
- Kosher salt
Combine salad, whisk all dressing ingredients together and toss salad -Enjoy!
