Simple, versatile and fresh
- fresh pasta( any variety- spaghetti, fettuccine, angel hair)
- 1/2 cup olive oil
-2 tsp garlic paste
-kosher salt to taste
-juice of one lemon
- 1 large cup of chopped fresh herbs of your choice( basil, parsley...)
- 1/2 cup pitted Kalamata olives (optional)
-1/2 cup chopped arugula, kale or spinach (optional)
-Grated Parmesan cheese
Combine olive oil, garlic( can use paste) kosher salt, fresh juice of one lemon, chopped fresh herbs in large bowl. Add cooked fresh pasta and toss. Top with grated Parmesan and a touch of lemon zest. Serve as a simple weeknight main or as a delicious compliment to your favorite grilled or pan seared protein
