For salad
- Micro greens with arugula
- 2 to 3 peaches cut in half and pitted
- thinly sliced prosciutto
- 1 container fresh burrata cheese
Lightly brush peaches with olive oil and grill flesh side down until slightly soft. Remove peaches from heat and slice. Toss greens, peaches and prosciutto in salad bowl with dressing and add burrata cheese. Serve over sliced baguette if desired. Tip- Grilling stone fruits bring out enhance their sweetness. Enjoy this taste of August salad.
For dressing
-1/2 cup olive oil
-1/4 cup white balsamic vinegar
- 3 TBS honey
- Kosher salt
Whisk all ingredients together
